This coffee was intentionally processed utilizing anaerobic fermentation by placing freshly-harvested cherries inside a sealed container or bag for a period of time. Anaerobically-fermented coffees often exhibit an increase in the intensity of fruit and acidity and a slight increase in the body. This Gesha microlot has winey acidity, burnt sugar sweetness, and fruity notes of fresh apple, blackberry jam, with a hint of pepper.
